The life span of a human being reaches ages over seventy years, but diseases are increasingly on the rise, thus disabling the life of everyone. One of the main factors altering lifestyle is oxidative stress that damages food molecules. Antioxidants prevent the deterioration of other substances that are indispensable for the correct biochemical functioning of the organism. One antioxidant that delays, prevents or cancels the oxidation of other substances are phenolics, antioxidants that protect humans from various diseases. The main source of these antioxidants is found in plants and foods that are beneficial to human health, besides being a nutritional and beneficial source for some diseases, such as diabetes, arteriosclerosis, cancer, cardiovascular and neurodegenerative diseases.
